		<description>I made this tonight.  It was fantastic!  I agree with Beth though- I made six enchiladas instead of eight.  Maybe because my tortillas were on the big side?  I&#039;m not sure, but they were so great, I&#039;d do the same thing next time.  I&#039;d rather have more filling than bread anyway.  Overall, super delicious and not outrageously time consuming.  I made the sauce early in the day, which cut down the steps at dinner time. Thanks, Beth!</description>
