It was fantastic! I agree with Beth though- I made six enchiladas instead of eight. Maybe because my tortillas were on the big side? I'm not sure, but they were so great, I'd do the same thing next time. I'd rather have more filling than bread anyway. Overall, super delicious and not outrageously time consuming.
