MY oh MY!!!

These look amazing! I always love looking for new recipes, and they are SO easy to alter to make them dairy free - as I have lots of friends who are. THANKS for sharing!

Hey :) Your cupcakes look amazing, but I can't seem to find vegetable shortening. What can I use instead? Can I use butter or vegetable oil?

@Rin - I'm glad you liked the cupcakes! The frosting can be temperamental, but I think it's worth it. :)
@Josh - Yes, just cut everything in half to make 15 cupcakes. I'm not sure where in NYC you are, but any store that sells household goods would have muffin tins. Try big stores like Bed, Bath & Beyond or K-mart. Alternatively, you could search for specialty cooking/baking supply stores in the city. Good luck!

Hi Beth
I made this today. the cupcakes came out so good and delish! but I did have the same problem as Crystal. I added the sugar cup by cup and when the first pound finish, the frosting was stiff. I added a table spoon of warm water and added just another cup of sugar. then, i just stop adding sugar anymore. It did come out OK. In fact, I love how the frosting so stiff and easy to handle. I tried others before, and I have to keep the frosting in the fridge for few days before it's ready to pipe. What confuse me is why it's stiff so quickly. May be the veg shortening. And I think I added too much cookies, cause my frosting is quite dark. But taste SO GOOOODD. THANK YOU

I made these tonight for an event at work. I only made half of the recipe and made a few adaptions of my own. Definately only fill the liners 2/3 of the way full. They will bake over. I chose to use mint oreo cookies to give the cake that minty flavor. Then to enhance it, in the frosting I used about 2 tablespoons of Creme de Menthe and 1/2 teaspoon of mint extract. I also used a couple of drops of green food color in the frosting.

These came out beautiful!

OK, first things first, your cupcakes look amazing! I was wondering what I did wrong tonight...I followed the recipe exactly, but my Oreos floated to the top. I thought that they might sink once they started baking but they didn't. Any ideas on what I did wrong? THey were cream side up.
